It is not only tasty, it is also extremely rich in vital substances: In addition to numerous vitamins, minerals and trace elements, tomatoes contain a high proportion of carotenoids, above all the red pigment lycopene, which gives the fruit its typical colour. Lycopene is characterised by its high antioxidant potential and supports the plant in its defence against harmful environmental influences. Tomatoes also contain phytoene and phytofluene, two other carotenoids that are stored in the skin and protect it from UV damage.
