The umbellifer Asant (Ferula asa foetida), also called Devil’s Dirt. The root contains gum resin, which smells very unpleasant. However, when used in cooking, the smell turns into that of onions and garlic. The ingredients include coumarins, azulene, resin, essential oils, asaresitannol and vanillin. Asafetida has a digestive effect, but is also used for asthma and pertussis.
