Zinc is the second most abundant trace element in the body. As a component of certain enzymes involved in protein, fat and carbohydrate metabolism, zinc ensures that metabolic processes run smoothly and also contributes to normal macronutrient metabolism. This trace element is present in all body fluids and tissues, especially in muscles (approx. 60%) and bones (approx. 30%). Higher concentrations are also found in hair, nails, skin, the reproductive organs, the retina of the eye, and the insulin-producing cells of the pancreas. Zinc therefore contributes to the maintenance of normal bones and normal skin. Zinc contributes to normal carbohydrate metabolism, normal acid–base metabolism and normal DNA synthesis. In addition, zinc supports normal cognitive function. It plays a role in the process of cell division and thereby also supports sperm production. Furthermore, zinc contributes to the maintenance of normal testosterone levels in the blood. In this context, it contributes to the protection of cells from oxidative stress, to normal fertility and to normal reproduction. Finally, zinc also contributes to the normal function of the immune system. Since zinc supply from foods of animal origin is usually better—because they contain higher amounts and have increased bioavailability—while plant-based foods often contain phytic acid, which binds zinc and reduces its absorption in the intestine—vegans and vegetarians in particular are at risk of inadequate intake.
