L-glutamic acid is a proteinogenic amino acid that is involved in the formation of proteins. Together with cysteine and glycine, it builds the tripeptide glutathione, which is a powerful antioxidant and plays a key role in the human redox system. In the brain, glutamic acid is found in high concentrations and acts as a stimulating neurotransmitter. At the same time, it acts as a precursor for the formation of γ-aminobutyric acid (GABA), an important inhibitory neurotransmitter in the CNS. These two messenger substances regulate each other. L-glutamic acid is both a precursor and a degradation product of the amino acid L-glutamine. During the synthesis of L-glutamine, harmful ammonia is bound and neutralised. Low glutamic acid concentrations can lead to cognitive impairment, anxiety, tension and sleep disorders.
